Ingredients:
1 Chicken, cut-up
4 lemons
Salt
Pepper
6 cloves garlic, crushed
1/2 cup chopped parsley
6 small, uniformly sized white potatoes (or larger white potatoes cut in half or quarters)
Equipment:
Compact roasting pan with cover.
Cooking time:
Approximately 2 hours.
Instructions:
Place cut-up chicken in roasting pan.
Salt and pepper skin of chicken.
Add 1/2 cup water to pan.
Cover pan.
Roast at 450° for 1 hour and 15 minutes.
Add:
Juice of 3 lemons.
Crushed garlic cloves.
Parsley.
Potatoes.
Then:
Spoon liquid over chicken and potatoes once or twice during the cooking process.
Roast for another 45 minutes or until done, putting the uncovered pan under the broiler for the last 5-10 minutes to brown the chicken.
