Andrew's Recipes

~ Stuffed Tomatoes ~

Ingredients:

10 large tomatoes
1 cup rice
1 lb. ground lamb
1 chopped onion
5 cloves chopped garlic
1/2 cup chopped parsley
2 tsp. dry mint
1/2 cup water
1/2 cup olive oil
2 tsp. sugar
3 tbs. butter
2 cups pulp and juice scooped from tomatoes

Instructions:

Parboil rice
Lightly brown lamb

Slice tops from tomatoes (save) and scoop out interiors
Discard hard center

Mix all ingredients, except sugar and butter, together and spoon into tomatoes
Sprinkle sugar and put dab of butter on top of each tomato
Replace tomato tops

Arrange in large baking/roasting pan with high sides
Pour in enough boiling water to cover bottom of pan

Cover, keeping the cover slightly askew, and bake at 350 degrees for about 45 minutes, then uncover and bake until lightly brown on top and done
