(Meatballs with Lemon Sauce)
Ingredients:
Meatballs
1 lb. ground beef
1/3 cup long grain rice
1 egg
1 clove garlic, minced
1 onion, finely chopped
1 tsp. dried mint
Salt and pepper to taste
Broth
2-3 cups chicken broth
1/4 lb. butter
Lemon Sauce
2 eggs
2-3 lemons
Garnish
2 tbs. parsley, finely chopped
Instructions:
Mix all the meatball ingredients together. Mold into round 1 inch/2.5cm balls. Put the chicken broth in a pot, melt butter in broth, place the balls in carefully. Simmer for about 20 minutes, let cool.
In a separate bowl, beat the eggs with a whisk and slowly, while beating, add the lemon juice ensuring the sauce doesn't curdle. With a ladle, take one cup of the warm broth from the meatball pot, slowly add to the lemon sauce to temper the eggs, all the time mixing.
Place meatballs in serving dish. Pour all the lemon sauce on top of the meatballs and serve with sprinkled parsley.
